Ketchup with Filet Mignon Stir-fry Recipe

Ketchup with filet mignon stir-fry recipe lets the tasty and tender beef be the star, coated with a quick ketchup sauce burst with flavor, indeed this can be an easy, family-favorite dinner.
Wok, colander, kitchen papers, bowls, plate.
7 oz./200g filet mignon, cut into thin strips1 stalk scallion, chopped fine2 garlic sloves, sliced1 ginger slice, minced1 tbsp.ketchup2 tbsps.white sugar1 tsp.salt2 tbsps.cornstarch1 tbsp.flour5 tbsps.vegetable oil for stir fry
1 tbsp.ground peppercorn1 tbsp.white rice wine1 tbsp.white sugar1 tsp.salt, or to taste
1. Combine filet mignon with the marinade in a bowl, mix well and let them marinate for about 30 minutes.
2. Combine 1 tbsp.cornstarch, 1 tbsp.flour, with 4 tbsps.water in a separate bowl, blend well until smooth, the batter should be thick.
3. Coat each filet mignon with the batter lightly (P1).

Place a wok over medium high heat, add 5 tbsps.vegetable oil and heat, when it is shimmering on the bottom and very hot, but not yet smoking, add the coated filet mignon, do not crowd the wok, deep fry over medium heat, until nicely browned (P2), then drain well in a colander, dry thoroughly with kitchen papers, place on a plate (P3).

P35. Whisk 1 tbsp.ketchup, 2 tbsps.white sugar, 1 tsp.salt, and drops water in a separate bowl, set aside for later use. In another bowl, mix 1 tbsp.cornstarch with 4 tbsps.water for the thickener.
6. Pour off the excess oil from the wok, leaving about 2 tbsps. in the wok, heat until hot, add chopped scallion, garlice and ginger, saute briefly until aromatic, abour 30 seconds. Then reduce to low heat, pour into the ketchup sauce mixture and stirring, swirl into the cornstarch-water mixture 1 minute later and cook.
7. At the last minute of cooking, place the cooked filet mignon back into the wok, tossing to coat the sauce lightly.
8. Turn off the heat and serve on a plate immediately (P4).
