Potato and Beef Stew Recipe

Potato and Beef Stew Recipe:
Potato and beef stew recipe - this stew takes 40 minutes to make and tastes as good as stew that has been simmering all the afternoon.

Utensils:
Sauce pot, pot, wok, bowl, plate.
 
Serves 2
Ingredients:
14 oz./400g beef
3 potatoes, peeled, cut into small cubes
1 tbsp.chopped scallion
4 slices ginger
2 tbsps.vegetable oil for stir-frying
Directions:

1. Cut the beef into 1-inch cubes, bring a pot of water to a boil, then place them in the boiling water and parboil for a couple of minutes, skim the foam as you cook with a spoon or a colander (P1).

2. Drain and remove the beef to a sauce pot covered with enough water, add 5 slices ginger, add salt as you would, cover and let simmer over low heat for about 30 minutes (P2).

3. When finished, drain the beef in a colander and place in a bowl, and try to reserve the stock for later use.

4. Preheat a wok over medium heat for at least 30 seconds before you add 2 tbsps.oil, then drizzling the oil to coat both the sides and the bottom of the wok.

5. Add chopped scallion when the oil is hot, saute briefly until aromatic, about 30 seconds, do not brown, then add potato cubes and cook, put beef back (P3).

6. Pour into the stock that reserved at step 3, cover and dail down to simmer, keep on a steady simmer until potato cubes are tender and the sauce thickens.

7. Remove from the wok to a plate, serve hot (P4).
