Sweet Red Pepper Pie with Beef Recipe

Sweet Red Pepper Pie with Beef Recipe:

Oven, bowl, colander, spoon, plate.

Ingredinets:
1-2 cups ground beef
1 beaten egg
1 tbsp.chopped scallion
1 medium size eggplant, peeled, cut into small cubes
2-5 sweet red pepper
Seasonings:
1 tbsp.ground black pepper
1 tbsp.salt
1 tbsp.light soy sauce,low sodium
Directions:

1. Put a large pot of water on to boil, place the eggplant cubes into the boiling water, parboil over medium heat for 2 minutes, or until the eggplant turn out tender.

2. Drain them well in a colander, then chop into small pieces, squeeze out excess water, then combine with all the ingredients and seasonings except sweet red peppers in a big mixing bowl, stir to mix everything well (P1).

3. Trim off the stems of the sweet red peppers, then cut lengthwise in half, place some meat mixture into each one with a spoon (P2).

4. Preheat the oven to 375 Degree F, put them in the oven, bake until completely heated through and golden and crisp on top, typically anywhere from 6-10 minutes.

5. Remove from the oven to a plate, when cool enough to handle, serve with your favorite sauce if desired (P3).
