Spicy Chicken with Onion Stir-fry Recipe

Spicy Chicken with Onion Stir-fry Recipe:
This is a quick, easy, and delicious chicken recipe that uses only a couple of ingredients! Try and enjoy this dish-one of the most unusual way of serving leftover chicken.
 
Prep time: 20 minutes
Total time: 30 minutes
 
Utensils:
Wok, mixing bowl, plate.
 
Serves 2 as a main dish.
 
Ingredients: (P1)
7 oz./200g chicken, or chicken wings, cut into sections
1 onion, peeled, sliced into thin slices
1 tbsp.chopped scallion
2 garlic cloves, sliced
2 chilis, diced
1 star anise
1 tbsp.bean sauce
4 tbsps.vegetable oil for stir-frying

Marinade:
2 slices ginger
1 tbsp.light soy sauce
1 tsp.sugar
1 tsp.salt
Directions:

1. Take a mixing bowl, add chicken chunks and the marinade, mix them well and let marinate for about 20 minutes before use.

2. Preheat a wok over medium heat, about 30 seconds, then add 2 tbsps.vegetable oil and swirl around the wok to coat the surface, add the marinated chicken back into the wok, stir fry over medium heat for 2 minutes, or until chicken turns white, remove them to a plate afterwards (P2).

3. Rinse the wok in question, heat 2 tbsps.vegetable oil over medium heat until hot, saute scallion and garlic cloves briefly until aromatic, about 30 seconds, swirl into 1 tbsp.bean sauce and cook briefly.

4. Put the cooked chicken back into the wok in which it was cooked, stirring, add the diced chili and star anise, pour into 1/2 cup water, cover and stew over medium heat for 3 minutes.

5. Add onion, keep cooking until the onion soften.

6. Place on a plate and serve hot (P3).
