Chicken Tofu Pie Recipe:
What better ways to enjoy chicken and tofu, than in this delicious chicken tofu pie?
Prep time: 20 minutes
Cook time: 5 minutes
Utensils:
Oven, kitchen paper, cleaver/spoon, bowl, 2 serving plates.
Serves 2 as a side dish
Ingredients:
7oz./200g chicken breast, shredded into small pieces1 block firm tofu (about 7oz./200g), cut into cubes, drained before use (please refer to the tips below)2 oz./40g dried wood ears1 bunch scallion, finely chopped2 slices fresh ginger, minced3 crushed garlic cloves1 tsp.sesame oilCheese, as needed1 tsp.ground black pepper
Seasonings:
1 tsp.granulated sugar1 tsp.salt, or to taste
Directions:
1. Drain tofu according to the tips, meanwhile, soaked dried wood ears in warm water for about 20 minutes ahead of time, then cut into small pieces.2. Mash tofu cubes with the side of a cleaver or the back of a spoon, stir into all the other ingredients and seasonings except cheese, stir to mix well (P1).
P13. Pour the mixture evenly into a baking tray (P2), sprinkle a layer of cheese over it (P3). Then put into oven and bake for about 3-8 minutes, or until cheese melts and color turns yellow (P4).

P44. Remove baking tray from the oven, cut the chicken tofu pie and arrange on a serving plate, when cool enough to handle, serve (P5).

Tips:
How to drain tofu before using:
1. Cut tofu into uniform size pieces.2. Lay a kitchen paper out on a big serving plate, arrange tofu cubes on it neatly, then cover another kitchen paper on them.3. At last, put a book or any other heavy things on it, let sit for 20 minutes until needed.4. During this period, you may find water leeks out of tofu, don't worry, just drain it by tiltting the plate if needed.
