Crispy Lotus Ginger Recipe:
This recipe is an easy, but impressive lotus dish. With the unique flavor of ginger root, crispy lotus ginger recipe can give you a refreshing change.
Prep time: 3 minutes
Cook time: 3 minutes
 
Utensils:
Pot, colander, 2 mixing bowls, plate.
Serves 2 as a side dish
 
Ingredients:
1 lotus root (about 7 oz.), peeled
1-2 fresh ginger root, peeled
1 red hot pepper, finely chopped
4 lemon wedges
Seasonings:
1 tbsp.light soy sauce
1-2 tbsps.rice vinegar
1 tbsp.sesame oil
Salt and MSG to taste
Directions:
1. Rinse and drain the lotus root well, then slice according to P1.

2. Cut ginger into small pieces (P2).

3. Add all the seasonings in a small bowl for sauce, set aside for later use.
4. Bring a large pot of water to a boil, blanch the lotus root slices for 30 seconds (P3), then drain well and rinse through running water to stop the cooking. Drain well and place to a mixing bowl, drizzle over the sauce lightly (P4).
 
Blanch for 30 seconds

5. Remove them to a serving plate, sprinkle with minced ginger root and chopped red hot peppers, garnish with lemon wedges, let refrigerator for 20-30 minutes before serving (P5).

Tips:
1. When blanching, for the sake of crispy, don't make it too long.
