Deep-fried mushroom recipe is a classic Chinese food, its crispy crust is perfect with the juicy mushromms. See how its done within 15 minutes!

Wok, bowl, colander, kitchen papers, plate.

Ingredients:
3.5 oz./100g mushroom, shredded (P1)
1 tbsp.chopped scallion
1 tbsp.minced ginger
3 tbsps.flour
1 tbsp.chicken essence
1 tbsp.ground black pepper
1 tsp.salt, or to taste
5 tbsps.vegetable oil for deep-frying

Directions:

1. Combine 3 tbsps.flour, 1 tbsp.chicken essence, 1 tbsp.ground black pepper, 1 tsp.salt, and 1-2 tbsps.water in a bowl, blend well to make a batter.

2. Dredge the mushroom shreds lightly in the batter (P2).

3. Place a wok over medium heat, add 5 tbsps.vegetable oil and heat until shimmering on the bottom and very hot, but not yet smoking, add the mushrooms, do not crowd the pan, deep fry over medium heat (P3).

4. When the mushroom shreds turn golden brown, turn off the heat, drain thoroughly in a colander, dry on kitchen papers.

5. Serve on a plate (P4).
