Crispy Golden Pancake Recipe:
This classic pancake is very famous in China, as its crispy crust paired with the fragrant flavors.
Prep time: 5 minutes
Cook time: 10 minutes
Utensils:
Frying pan/wok, rolling pole, plate.
Ingredients:
17 oz./500g flour4 tbsps.chopped scallion1/2 cup water2 tbsps.salt, or to taste4 tbsps.vegetable oil
Directions:
1. Add flour in a big basin, drizzle 1/2 cup water in occasionally, use both of your hands to make dough, knead the dough for 3-5 minutes (P1).
P12. Separate the dough into 4 parts. Use a rolling pole to roll out respectively, spread pinch of salt over it evenly, then brush 1 tsp.vegetable oil on each, sprinkle 1 tbsp. chopped scallion on each (P2).
P23. Fold each up and roll out (P3).
P34. Repeat Step 3 for 4-5 times or more as you would (P4).
P45. In a non-stick frying pan, add 1-2 tsps.vegetable oil and swirl it around the pan, when the oil is hot, pan fry each pancake separately over lowest heat until bothsides turns out golden, about 3-5 minutes (P5).
P56. Dish out onto a plate and serve hot.
Tips:
1. At step 3&4,you'd better toss pinch of flour on the dough to prevent it from sticking.2. At step 3, the more you fold, the more layers you will get.
