Honey Pear Paste

Honey Pear Paste:
Honey pear paste a traditional Chinese paste that you can find in the market. Read on, you can easily make one that tastes even better at home.
 
Prep time: 5 minutes
Cook time: 90 minutes
 
Utensils:
Wok, sieve/strainer, grater/shredder, spoon, ramekin. 
Ingredients: (P1)
6 pears, about 50oz./1500g
3.5 oz./100g red jujubes
5oz./150g rock candy
5 slices ginger, peeled
5 tbsps.honey liquid
Directions:
1. Cut red jujubes lengthwise in half, remove the cores (P2); cut ginger slices into thin strips (P3); peel the pears (P4) and grate into fine crumbs with the help of a grater or shredder (P6).

2. Put all the ingredients except honey liquid into the wok (P5&7), turn heat to low, cover and simmer for about 30 minutes (P8)
3. Use a sieve or strainer to scoop up the paste from the wok, squeeze out any liquid by pressing the back of a spoon (P9), discard the ginger strips and other remaining things.
4. Simmer the liquid over low heat until it thickens, which will take about 1 hour (P10).
5. Turn off the heat and remove from the wok to a ramekin (P11), let cool. Then stir in honey liquid, stir to mix everything together (P12).

Tips:
1. The thick of pear paste is easy to adjust to your taste by controling the time of cooking.
2. At Step 5, stir in the honey liquid when pear paste is totally chilled, otherwise the high tempreture may damage the honey's nutrition.
3. Cover and keep in the refrigerator. Combine 1-2 tsps.pear paste with 1 cup warm water when needed.
