Miso Paste Red Pepper Salad Recipe

Miso Paste Red Pepper Salad Recipe:

Ingredients:
2 red peppers, stemmed
1 stalk scallion, chopped fine
2 tbsp.toasted sesame seeds
2 tbsps.miso paste
2 tbsps.sesame oil
Directions:
1. Blend the miso paste, sesame oil, and sesame seeds together in a bowl for sauce, set aside.
2. Cut red peppers lengthwise into half, remove the seeds, then cut diagonally into 1-2-inches strips.
3. Put a pot of water on high heat, when boiling, place red pepper strips into it and parboil until it is just tender, which will take about 1 minute. When done, drain well and place into a separate bowl.
4. Pour the sauce over the red pepper strips, mix to properly coat with the sauce.
5. Top with a sprinkling of chopped scallion before serving.
