Spicy Crispy Horsebean Recipe:
This is a classic chinese food recipe, easy but impresive. If you are looking for a crispy bean recipe, give this spicy crispy horsebean recipe a try. It is easy to make at home, so there is no need to go out to enjoy this delicious food.

Cook time: 35 minutes.
 
Utensils:
Large wok, colander, spatula, serving plate.
 
Serves 2
 
Ingredients:
7oz./200g horsebean
1 tbsp.chopped scallion
3 slices fresh ginger, minced
4 cloves crushed garlic
2 tbsps.wild pepper, smashed (P0)
2 red bell peppers, chopped fine
2 tbsps.vegetable oil
5-8 cups water

Seasonings:
1 tbsp.soy sauce, low-sodium
1 tbsp.rice vinegar
Sugar,salt and MSG to taste
Directions:
1. Place a large wok on medium-high heat, stir fry the horsebean for 2-3 minutes, or until golden (P1).

2. Pour 5-8 cups water into the wok in which it was cooked, simmer for 30 minutes over low heat, until the horsebeans are tender (P2). Drain well in a colander and remove to a serving plate (P3).

3. Preheat a skillet on medium-high flame, heat 2 tbsps.vegetable oil until hot, saute scallion, ginger, garlic and chopped red bell peppers briefly, about 30 seconds, then spoon over the horsebean.
4. Add wild pepper and all the seasonings to the horsebean, stir to mix everything together and serve (P4).

Tips:
1. Before you cook red bell pepper,you'd better soak them in water for about 5 minutes, which can prevent burnt while cooking.
2. For a bit spicy version, you can add more chili powder or chili sauce along with red bell peppers.
