Sweet Potato Pie

Sweet Potato Pie:
This sweet potato pie recipe is a great example of how just a couple of ingredients make a sweety and crispy pie. Crispy sweet Potato pie ready to coat with your favorite sauce.
 
Prep time: 2 minutes.
Cook time: 20 minutes.
 
Utensils:
Bowl, non-stick skillet, spatula, serving plate.
 
Serves 2
 
Ingredients:
1 sweet potato (about 14oz.)
Proper quantity of glutinous rice flour
2-3 tbsps.vegetable oil
1 cup water
Seasonings:
Granulated sugar to taste
Directions:
1. Rinse sweet potato through running water, peeled and cut into small cubes, then put into a bowl, add 1 cup water just covers the surface of the cubes (P1).

2. Cover the bowl with waxed paper and place in microwave oven (P2), cook over high heat for about 10 minutes.

3. When done, remove from the oven and smash with a spoon(P3). Taste and add sugar as you would.

4. Toss pinch of glutinous rice flour into the paste bowl gradually, mix well with a spoon, when the mixture becomes sticky (P4), roll it into a flat bread (P5).

5. Add 2-3 tbsps.vegetable oil to a non-stick skillet, heat on medium-high flame till hot, lay the dough out on the skillet, pan fry 2-3 minutes per side, or until golden (P6).

6. Remove from the skillet to a serving plate, let cool 2 minutes before serving (P7).

Tips:
1. For a bit sweeter version, you can add more sugar at step 3.
2. Serve with ketchup is also a satisfying choice.
