Balsam Pear and Shrimp Egg Pie:
This easy-to-make recipe features a terrific combination of the tangy balsam pear, meaty shrimp, and smooth egg. Balsam pear and shrimp egg pie is tasty, as well as nutritious.

Cook time: 5 minutes
 
Utensils:
Wok, bowl, plate.
 
Makes 1 balsam pear and shrimp egg pie.
Ingredients: (P1)
1/2 balsam pear, deseeded, cut into thin strips
1/2 cup shrimp meats
1 beaten egg, whisked lightly with pinch of salt

Directions:

1. Blanch the balsam pear strips in boiling water, about 30-60 seconds, or until turns a jade green, then drain well and remove to cold water to stop cooking, then drian well and set aside.

2. Add 2 tbsps.vegetable oil in a wok, turn on heat to high, then swirl the oil around the wok, add balsam pear strips and shrimp meat when the oil is hot, cook until the shrimp is pink, about 1-2 minutes, then reduce heat to medium, pour the whisked egg over the balsam pear and shrimp meat(P2), cook until the egg have set.

3. Remove to a plate and serve immediately(P3).
