Makes 1 portion of Balsam Pear Egg Pie
Ingredients:
2 eggs1 balsam pear, sliced well1 tbsp.chopped scallion2 slices fresh ginger1-2 tsp.salt, or to taste2-4 tbsp.vegetable oil
Directions:
1. Add 2 tbsp.vegetable oil in a wok, and turn on heat to medium, saute scallion and ginger slices until aromatic, about 20 seconds. then add sliced balsam pear and cook until tender. Spread them evenly around the wok (P1).
P12. Beat 2 eggs in a bowl, lightly whisk with pinch of salt.3. Swirl the egg mixture over the sliced balsam pear evenly (P2), cook over medium heat until egg have set. Then turn over and cook the other side by the help of a spatula. Correct for salt while you cook.
P24. Serve on a plate (P3).
