Crispy Pepper Egg Pie Recipe

Crispy Pepper Egg Pie Recipe:
This recipe combines 3 easy-to-prep ingredients-red pepper, green pepper, and egg-for an easy, refreshing course. You can coat with your favorite sauce for a mouth-watering treat as well.

Total time: 15 minutes
 
Utensils:
Wok, bowl, plate.
 
Serves 2
 
Ingredients: (P1)
1/2 red pepper, seeded, diced
1/2 green pepper, seeded, diced
3 large eggs
1 tbsp.cornstarch, mixed with 4 tbsps.water in a bowl
1 tsp. salt, or to taste
2 tbsps. vegetable oil for stir-frying

Directions:

1. Beat 3 eggs in a bow, whisk lightly, stir in 1 tsp. salt, cornstarch and water mixture, also red and green pepper cubes, mix them together (P2).

2. Preheat a wok on medium heat, add 2 tbsps. vegetable oil, drizzling the oil so that it coats both the sides and the bottom of the wok.

3. When the oil is hot, reduce to low heat, pour the egg and pepper mixture evenly into the wok, cover and cook for 2-3 minutes (P3).

4. Remove the lid, check whether the eggs are firm and golden, if so, turn with the help of a spatula and cook the other side with the lid on over low heat for 2-3 minutes (P4).

5. When cooked, turn off the heat, let it cool completely in the wok before cut into squares.

6. Serve on a plate (P5).
