Garlic Sprouts with Egg Recipe

 Garlic Sprouts with Egg Recipe:
This is an easy and classic chinese food recipe. Garlic sprouts with egg recipe features a great combination of the crispy black fungus and smoothy egg cream.
 
Prep time: 5 minutes
Cook time: 5 minutes
 
Utensils:
Wok, pot, spatula, colander, bowl, serving plate.
 
Serves 2
 
Ingredients:
7oz.(200g) garlic sprouts
4-5 black fungus (soak in water for 20-30 minutes ahead of time)
1 tbsp.chopped scallion
2 large eggs
2 tbsp.vegetable oil
3 cups water
Seasonings:
1 tbsp.soy sauce, low-sodium
Salt to taste
Directions:
1. Chop garlic sprouts into 1-inch length pieces(P1), then transfer to a plate for later use.

2. Bring a large pot of water to a boil, at the same time, beat two eggs in a bowl and whisk lightly with pinch of salt, reduce heat to low, swirl it around the pot evenly into the boiling water (P2) , cook until the egg have set. Drain well in a colander, place onto a plate.

3. Heat 2 tbsp.vegetable oil in a wok,when hot, saute the chopped scallion briefly until aromatic, then cook garlic sprouts (P3) , sprinkling 1 tbsp.soy sauce over them as you stir fry, stirring and tossing them around the wok until tender.

4. At last, add soaked black fungus and cooked egg back into the wok, taste and adjust seasoning as desired,stir briefly to mix everything together (P4) .

5. Place onto a serving plate, serve hot (P5).

Tips:
1. At step 2,try not to pour the egg into one place wholly, you'd better swirl it evenly around the pot.
