Kung Pao Tofu Recipe

Similar to Kung Pao chicken, Kung Pao tofu is a famous and delicious dish as well, especially for vegetarians.
Kung Pao Tofu Recipe
Wok, colander, plate.
1/2-1 block firm tofu, about 200g /7 oz.1/2 carrot, cut into small cubes1 asparagus, cut into small cubes10 peanuts1 stalk scallion, chopped2 slices ginger, crushed2 garlic cloves, crushed5 chilis, chopped1 tbsp. Szechuan peppercorns1 tsp.salt, or to taste
1 tbsp.light soy sauce1 tbsp.vinegar1/2 tbsp.white sugar1 tbsp.Chinese rice wine, or dry sherry1/2 tbsp.chicken essence1 tbsp.sesame oil1 tbsp.cornstarch, mixed with 4 tbsps.water in a bowl
1. Drain the tofu well before use according to the tips at the end.
2. Preheat a wok over medium high heat for about 30 seconds, then add 2 tbsps.vegetable oil, add peanuts and stir fry over low heat until cooked, about 1 minute. Then drain well and set them aside for later use (P1).
P12. Add more vegetable oil into the wok in question, add the drained tofu cubes and deep fry over high heat until golden, drain well and set aside (P2&3).

P33. Add all the seasonings in a bowl for sauce.
4. Pour off all the oil but 2 tbsps.oil form the wok, add Szechuan peppercorns, ginger, garlic cloves, and carrots when the oil is hot, stir fry over medium heat until carrot turns color (P4).
P45. Add chilis, scallion, and asparagus, continue to cook over high heat for 1-2 minutes (P5).
P56. Put the deep-fried tofu cubes back into the wok in which it was cooked, stir fry for a while (P6).
P67. Stir into the sauce, season with salt, add peanuts, stir fry briefly to make everything well (P7).
P78. Remove from the heat to a plate, and serve hot (P8).

1. Cut tofu into uniform size pieces.
2. Lay a kitchen paper out on a big serving plate, arrange tofu cubes on it neatly, then cover another kitchen paper on them.
3. At last, put a book or any other heavy things on it, let sit for 20 minutes until needed.
4. During this period, you may find water leeks out of it, no worries, drain it by tiltting the plate if needed.
