Tomato and Egg Stir-fry Recipe:

Wok, bowl, plate.

Ingredients:
2 tomatoes, peeled, cut into wedges (P1)
2 eggs, beaten, whisked lightly
1 tsp.salt, or to taste
2 tbsps.vegetable oil for stir-frying

Directions:

1. Preheat a wok over medium-high heat, about 30 seconds later, add oil and swirl to coat the surface, pour into the egg mixture and scramble until quite firm, about 2 minutes, then transfer to a plate (P2).

2. Add the tomato back into the wok, stir fry over medium heat, toss 3-5 tbsps.water as needed, then cover and let cook until tomatoes are tender, stirring occasionally (P3).

3. At last, add the cooked egg back to the wok, stir briefly to mix everything together.

4. Taste and season with salt as desired, serve on a plate (P4).
