Curry and Shrimp Meat Fried Rice

Curry and Shrimp Meat Fried Rice:

Utensils:
Wok, bowl.
 
Makes 1 portion of curry and shrimp meat fried rice.
 
Ingredients:
3-4 cups pre-cooked long grain rice ( refrigerated )
1 (4 oz.) can shrimp meat
1 onion, cut into small cubes
1 sweet red pepper, deseeded, cut into small cubes
3 cloves garlic, sliced
3 tbsp. ketchup
2 tbsp. curry powder
2 tsp. ground black pepper
1 tsp. salt, or to taste
2 tbsp. vegetable oil
Directions:
1. Heat 2 tbsp. vegetable oil in a wok on medium heat, saute onion cubes briefly until aromatic, then put shrimp meat into the wok, stir fry for 2 minutes, sprinkle 2 tbsp.curry powder as you stir fry.
2. Add garlic cloves, sweet red pepper cubes and 3 tbsp.ketchup into the wok, continue to cook over medium heat for another 30 seconds (P1).

3. At last, add steamed rice into the wok, stirring and tossing all together until well mixed, splash with 2 tsp. black pepper, taste and correct for salt if necessary (P2).

4. Remove to a bowl, serve hot (P3).

Tips:
1. Refrigerated long grain rice doesn't tend to stick and makes it perfect for this delicious dish.
