How to make Wonton and Noodle:
This recipe will show you how to enjoy wonton and noodles at the same time.
Prep time: 10 minutes
Cook time: 30 minutes
Utensils:
Wok, rolling pole, bowl.
Makes 1 portion of wonton and noodle.
10oz.or 300g flour5oz.or 175g ground pork5oz.or 150g noodle1 tbsp.chopped scallion1 tbsp.minced fresh ginger1 beaten egg3 stalks spinach or other greens3-5 slices barbecued meat2 tbsps.vegetable oil6-12 cups water
1 tbsp.salt1tbsp.yellow wine1 tbsp.ground black pepper
1 tbsp. light soy sauce1 tbsp. salt, or to taste1 tbsp. hot chili sauce, optional1 tbsp. sesame oil.
1. Put ground pork, chopped scallion, ginger and Seasoning A in a bowl, stir to mix everything together.
2. In a big basin, put 10oz.or 300g flour in, drizzling 1/2 cup of water in occasionally while you making dough, knead it for 3-5 minutes (P1). Cover it with a wet cloth and leave to rise for 1-2 hours (P2).

P23. Roll out the dough to a large flat bread with a rolling pole (P3&4).

P44. Fold in half, then cut it into 8-10cm. / 3-inches width strips (P5), then cut each strip into squares or trapezoids according to P6.

P65. Spread the wrapper square or trapezoid across your palm, place a small clump filling in the center (P7).
P76. Fold the wrapper according to P8,then fold again (P9).

P9 7. Nip the two thick edges together with your forefinger and thumb (P10).

8. Arrange them on a clean and flat place for later use, toss pinch of flour to prevent from sticking.
9. In a wok, saute 1 tbsp.chopped scallion with 2 tbsps.vegetable oil until aromatic, about 20 seconds, drizzle 1 tbsp. light soy sauce over it, then pour 5-10 cups water into the wok, bring them to a boil.
10. Toss the noodle into boiling water, gently separate the noodle strands with the chopsticks, turn off the heat until soften, about 3-5 minutes. Add wonton back into the wok in question, continue to cook over moderate heat for 3-5 minutes.
11. Then add in the beaten egg, spinach, barbecued meat and hot chili sauce, continue to cook for another 1-2 minutes until done.
12. Dump into a bowl, drizzle 1 tsp.sesame oil lightly over and serve hot (P11).

1. At Step 4, you'd better toss pinch of flour on the flat bread to prevent sticking.
2. You can change the ratio of noodle and wonton according to your needs.
