Ketchup Spinach Fried Rice

Ketchup Spinach Fried Rice:

Utensils:
Wok, bowl
 
Makes 1 portion of ketchup spinach fried rice
 
Ingredients:
3-4 cups pre-cooked long grain rice (refrigerated)
3 stalks cleaned spinach
1 tbsp. chopped scallion
2 tbsps. ketchup
Salt to taste
2 tbsps. vegetable oil for stir-frying
Directions:
1. Heat 2 tbsps. vegetable oil in the wok on high heat, when hot, saute chopped scallion for 15-20 seconds until aromatic (P1).

2. Add rice and 2 tbsps. ketchup, keep stirting for a while (P2).

3. At the last minute of cooking, add spinach and continue to cook until the leaves are nearly milted.
4. When nears done, add salt and adjust seasoning if necessary, remove to a bowl and serve (P3).

Tips:
1. Refrigerated long grain rice doesn't tend to stick and makes it perfect for this delicious dish.
