Veggies and Shrimp Rice Recipe

Veggies and Shrimp Rice Recipe:
In this tasty rice recipe, you will enjoy a couple of good things, such as juicy shrimp, tangy cucumber, and red bell pepper. This veggies and shrimp rice recipe is a beautiful, and delicious way to break the boring rice routine.
 
Prep time: 5 minutes
Cook time: 10 minutes
 
Utensils:
Wok, bowl, plate.
 
Makes 2 portions of veggies and shrimp rice.
 
Ingredients: (P1)
1 cup cooked rice, do not refrigerate before use
2 tbsps.shrimp meat
1 tbsp.chopped scallion
1/2 cup hard boiled egg white cubes, about 1/2-inch length
1/2 cup cucumber cubes, about 1/2-inch length
1 red bell pepper, seeded, diced
2 tbsps.vegetable oil for stir-frying

Seasonings:
1 tbsp.wine
2 tbsps.ketchup
1 tsp.white sugar
1 tsp.salt, or to taste
1 tbsp.cornstarch, mixed with 4 tbsps.water in a bowl
Directions:

1. Place a wok over high heat, add 2 tbsps.vegetable oil and swirl around to coat surface, when hot, add chopped scallion and cook 20 seconds until aromatic.

2. Add all the other ingredients and cook, stirring over medium heat, about 1-2 minutes (P2).

3. Pour into 2 cups water and bring to a boil, then stir in 2 tbsps.ketchup, 1 tbsp.wine, and 1 tsp.white sugar, salt as you would (P3).

4. Bring the sauce to a boil, give the cornstarch and water mixture a quick stir, then swirl into the wok, stir quickly to thicken (P4).

5. In a large bowl or plate, just before serving, toss the cooked rice with a generous amount of the sauce, serve hot (P5).
