Chicken Sweet Potato Sausage

Chicken Sweet Potato Sausage:
This chicken sweet potato sausage is a beautiful, and delicious way to break the sausage routine. You can also coat with your favorite sauce for a mouthwatering treat.
 
Prep time: 5 minutes
Cook time: 30 minutes
 
Utensils:
Pot, non-stick skillet, food processor (hand blender), bowl, plate.
 
Serves 2
 
Ingredients: (P1)
1 medium size sweet potato
2 chicken breast steaks, cut into thin strips, about 1-inch length
1 tbsp. cornstarch
1 tsp. salt, or to taste

Directions:

1. Heat a large pot of water to a boil, then place the sweet potato in it, cook over medium heat until tender, about 20 minutes. Then remove from the pot to a cutting board, peel and cut into small cubes.

2. Place the sweet potato cubes and chicken breast strips in the bowl of a food processor (hand blender), blend about 2 minutes, or until smooth (P2).

3. Remove the paste to a big mixing bowl, stir into 1 tbsp. cornstarch and 1 tsp. salt, stir to mix everything together (P3). Form the mixture into sauage of about 1-inch diameter.

4. Add 2-4 tbsps. vegetable oil in a non-stick skillet, heat until it is shimmering on the surface and very hot but not yet smoking, lay the sausage on it, pan fry over medium heat, wrinkled and lightly browned through, or until cooked, about 5 minutes (P4).

5. Place them on a plate, serve with ketchup if desired (P5).
