Ingredients:


400 g / 14 oz. pork, cut into 1-inch cubes
20 chestnuts, peeled
2 tbsps. light soy sauce
3 tbsps. brown sugar
2 stalks scallion, cut into sections
3 slices ginger
4 chilis
1 tbsp. salt, or to taste


Directions:


1. Preheat a wok for about 30 seconds over high heat, add pork cubes and pan fry over medium heat until bothsides turn brown (P1).

2. Add 2 tbsps. light soy sauce, 3 tbsps. brown sugar, scallion, ginger, and chilis into the wok, stir fry until aromatic (P2).

3. Add 1-2 cups warm water, cover and bring to a boil then (P3).

4. When boiling, add chestnuts and reduce to medium high heat, continue to simmer with the lid on for about 30 minutes, or until coooked.


5. When the sauce thickens, season with salt, mix well and remove to a plate, serve hot (P4).
