Sauerkraut Sausage Stew Recipe:
This extremely basic sauerkraut sausage stew recipe lets the sausage be the star. And the sour sauerkraut add a subtle accent to this delicious sausage recipe.
 
Prep time: 5 minutes
Cook time: 35 minutes
 
Utensils:
Wok, serving plate.
 
Serves 3 as a side dish of a big meal,or make a main meal for 2 when served over steamed rice.
 
Ingredients:
5 tbsps.sauerkraut, shredded fine
1 onion, peeled and thinly sliced
1-2 Chinese sausage, cut into 1-inch sections
2 red hot peppers, remove seeds and ribs, cut into small pieces
1 bunch scallion, finely chopped
2 crushed garlic cloves
1 cup chicken stock
2 tbsps.vegetable oil
1 tsp.salt, or to taste
Directions:
1. Add 2 tbsps.vegetable oil to a wok over medium high heat, when hot, saute garlic cloves until aromatic, about 20 seconds, then add onion shreds and Chinese sausage (P1).

2. Put sauerkraut shreds and red hot peppers into the wok, pour into 1 cup chicken stock, bring to a boil, then reduce heat to low and simmer uncovered for about 30 minutes (P2).
Simmer the mixture uncovered for about 30 minutes

3. Sprinkle chopped scallion over evenly, taste and adjust seasoning with salt as needed.
4. Remove to a serving plate and serve hot (P3).
