Snow Pea with Meat Stir-fry Recipe

Snow Pea with Meat Stir-fry Recipe:
Snow pea with meat stir-fry recipe is a true China comfort food classic. It is the perfect way to use up leftover meat, and you can use whatever vegetables you like.
 
Prep time: 8 minutes
Total time: 15 minutes
 
Utensils:
Wok, plate.
 
Serves 2
 
Ingredients:
7 oz./200g pork, or beef, cut into strips
3.5 oz./100g snow peas
1 tbsp.chopped scallion
2 slices ginger
1 tbsp.chicken essence
1 tbsp.white rice wine
1 tbsp.bean sauce
1 tbsp.light soy sauce
2 tbsps.vegetable oil for stir-frying
Directions:

1. Bring a large pot of water to a boil, place the meat strips in, parboil over high heat for 2 minutes, or until the color turns white, drain well and set aside.

2. Place the snow peas into boiling water, blanch until color turns a brighter green, about 1-2 minutes, drain well and set aside.

3. Preheat a wok over medium heat for 30 seconds, then add oil and swirl to coat the surface, saute scallion and ginger when the oil is hot, add parboiled meat strips back into the wok when scallion is aromatic, stirring, stir in 1 tbsp.bean sauce, stir to combine (P1).

4. Add in the snow peas, swirl the white rice wine, chicken essence, and light soy sauce into the wok, turn heat back to high and stir, toss all together until cooked (P2).

5. Remove them from the wok, serve on a plate (P3).
