Tomato with Pork Tenderloin Stew Recipe

7 oz./200g pork tenderloin, cut into thin strips1 onion, peeled, cut into small cubes3 fresh mushrooms, quartered3 tomatoes, cut into wedges1 tbsp.chopped scallion1 tbsp.ground black pepper1 tbsp.Chinese rice wine, or dry sherry1 tsp.salt, or to taste4 tbsps.vegetable oil, for stir-frying

1. In a big mixing bowl, combine pork tenderloin strips, 1 tbsp.ground black pepper, and 1 tsp.salt together, mix well and let marinate for 15 minutes before use.
2. Peaheat a wok on medium-high heat for at least 30 seconds before add oil, when oil is hot, sear pork tenderloin strips until no pink shows, about 4 minutes, transfer them to a plate for later use.
3. Add 2 tbsps.vegetable oil in the same wok, saute chopped scallion and onion cubes briefly until aromatic, about 30 seconds, do not brown them.
4. Add mushrooms, stir fry for 1-2 minutes over medium heat before you add seared pork back, stir into 1 tbsp.Chinese rice wine as you stir fry.
5. At last, add tomatoes, pour into 1/2-1 cup water to cover, turn heat back to high and bring to a boil, then reduce to low heat, let simmer until tomatoes soften, which will take about 10 minutes or so (P2).
