Utensils:
Wok, bowl, plate.
Serves 2 as a side dish.
Ingredients:
2 center-cut salmon filet, 3 oz.each, boneless, skinless5 slices fresh ginger, peeled4 cloves crushed garlic3-6 tbsps.peppercorns10-15 red peppers, stemmed10-15 tbsps.vegetable oil
Marinade:
1 egg white1-2 tbsps.Chinese rice wine, or dry sherry2 tsps.salt, or to taste1-2 tsps.cayenne/ground red pepper1-2 tsps.chicken essence1-2 tbsps.cornstarch
Directions:
1. Rince and drain the filet well, combine with marinade in a mixing bowl, toss until the filets are coated and let marinate for 30 minutes.2. Add 2 tbsps.vegetable oil to a wok, saute the ginger and garlic over medium-high flame, when it begins to sizzle, and before it starts to brown, discard them with ladle.3. Add another 6-10 tbsps.vegetable oil into the wok in which it was cooked, when hot, reduce heat to low, deep fry 3-6 tbsps.peppercorns for about 1-2 minutes, or until aromatic (P1).
P14. Add red peppers, keep cooking for about 1 minute over low heat (P2).

5. Add filets and cook until done, salt as you would, mix well and transfer to a big warmed bowl, let cool 10 minutes before serving (P3).

Tips:
1. At step 3&4, keep on low heat while cooking peppercorns and red peppers.
