Fish and Tofu Recipe

Fish and Tofu Recipe:
Fish and tofu are always great together, here they combine to make a really delicious fish recipe, which is simple to master and works every time.
Prep time: 5 minutes
Cook time: 20 minutes
Utensils:
Wok, clay-pot, bowl.
Serves 2
Ingredients:
1 salmon jowl
1 block firm tofu, cut into 1-inch cubes
1 tbsp.chopped scallion
1 bunch scallion, cut into 2-inches sections
2 slices fresh ginger, cut julienne
5 tbsp.vegetable oil
2 cups water
Seasoning A:
1-2 tbsps.oyster sauce
1-2 tsps.salt, or to taste
1-2 tsps.white sugar, or to taste
Directions:
1. Rinse the jowl, cut into sections according to P1.

2. Add 5 tbsps.vegetable oil in a wok, turn on the heat to medium, when the oil is very hot, but not yet smoking, deep fry tofu cubes until golden. Then drain well in a colander and cut each crosswise (P2).

3. Pour off all but 1 tbsp.vegetable oil from the wok, saute ginger strips over high heat until aromatic, about 20 seconds, then add the jowl, tofu cubes and seasoning A, cook for another 3 minutes (P3).

4. Preheat a clay-pot on medium heat until hot, put the scallion sections on the bottom (P4).

5. Remove the tofu and jowl mixture to the clay-pot, pour 1 cup water, then bring to a gentle simmer over low heat until the water reduces (P5).

6. For an added touch, try garnishing with chopped scallion, then let cool 5-10 minutes and serve (P6).
