Home-made Spicy Salmon Filets Stew Recipe:
This is the recipe for salmon with spicy sauce that is often featured at Chinese restaurants. Salmon filets are parboiled and then simmered with spicy chilies in a tasty sauce. And the secret ingredient in home-made spicy salmon filets stew recipe is hot bean sauce.

Wok, pot, bowl, serving bowl.
 
Serves 2 as a main dish.
 
Ingredients:
14 oz./400g salmon filets
2 cups bean sprouts
2 stalks celery, cut into 1-inch sections
1 cup chicken stock
1 tbsp.chopped scallion
3 slices ginger, minced
5 garlic cloves, sliced
1 tbsp.peppercorn
10 chilies, diced
1 tbsp.cornstarch
1 tbsp.hot bean sauce
1 tbsp.light soy sauce
1 tbsp.Chinese rice wine, or dry sherry
1 tsp.salt, or to taste
3 tbsps.vegetable oil
Directions:

1. In a big mixing bowl, combine salmon filets with 1 tbsp.cornstarch, 1 tbsp.Chinese rice wine, 1 tsp.salt, mix well and let them marinate for 20 minutes before cooking.

2. Preheat a wok over medium heat for at least 30 seconds before you add 3 tbsps.oil, then drizzling the oil to coat both the surface and the bottom of the wok, when hot, saute peppercorn, chopped scallion, ginger, garlic, and bean sauce over medium heat, about 30-60 seconds, or until aromatic.

3. Add bean sprouts, celery, and chilies, stir fry for a while, pour into 1 cup chicken stock, swirl into 1 tbsp.light soy sauce, then bring to a boil and then reduce to simmer for another 2-3 minutes (P1).

4. When finished, ladle the bean sprouts and celery into a warmed serving bowl, reserve the sauce, do not pour it off.

5. Bring a large pot of water to a boil, place the marinated salmon filets in, parboil until nearly cooked, about 3 minutes (P2).

6. Drain them well and add into the sauce, keep cooking for another 1-2 minutes before you pour them into the serving bowl (P3).
