Pot, wok, colander, plate.

Ingredients: (P1)
7 oz./200g octopus
3 green peppers, seeded, diced
1 carrot, sliced thin
1/2 stalk scallion, cut into sections
3 slices ginger
3 garlic cloves
1 tbsp.ground black pepper
1 tbsp.chicken essence
1 tsp.salt, or to taste
1 tbsp.Chinese rice wine, or dry sherry
2 tbsps.vegetable oil, for stir-frying

Directions:

1. Rinse octopus thoroughly under running water and then cut into 1-inch sections.

2. Bring a large pot of water on to a boil, place into the octopus sections and blanch for 1 minute, or until crisp (P2).

3. Add 2 tbsps.oil in a wok, swirl around to coat the surface until hot, saute ginger, scallion and garlic for 1 minute, or until aromatic.

4. Put all the ingredients back into the wok in which it was cooked, stir frying over medium heat until carrot and pepper are tender, about 3 minutes (P3).

5. Dish out on a plate and serve hot (P4).
