Prawn and Crab Rice Soup Recipe

Prawn and Crab Rice Soup Recipe:
If you are a seafood lover, then you will like this prawn and crab rice soup. It is a healthy and very refreshing soup that you can easily make at home. You only need a couple of easy-to-prep ingredients, and it is simple to master as well.
 
Prep time: 10 minutes
Cook time: 20 minutes
 
Utensils:
Wok, bowls.
 
Serves 2
 
Ingredients:
7 oz./200 g pumpkin, peeled, cut into 1-inch sections
3 prawns, rinse and drain well, peeled
2 crabs, rinse and drain well, chop into sections
1 cup long grain rice
2 slices ginger
2 garlic cloves, sliced
1 tbsp.chopped coriander
1 tsp.salt, or to taste
1/2-1 cup chicken stock
2 tbsps.vegetable oil for stir-frying
Directions:

1. Add 2 tbsps.vegetable oil in a wok, preheat on high heat, when hot, add ginger and garlic and cook, about 20 seconds, or until aromatic. Add pumpkin sections and cook until soften (P1).

2. Pour into 1/2-1 cup chicken stock into the wok in which it was cooked, add prawns, crabs and 1 cup rice back into the wok, cook over medium heat until the shrimp are golden (P2).

3. Scatter the chopped coriander over the soup , salt as you would and mix well (P3).

4. Ladle into warmed bowls and serve (P4).
