Stir Fry Egg with Salmon Filet Recipe:
If you like slamon, you will love this stir fry egg with salmon filet recipe, which only has a few ingredients, and only takes a few minutes to cook.
 
Prep time: 20 minutes
Cook time: 5 minutes
 
Utensils:
Wok, 2 mixing bowls, serving plate.
 
Serves 2
 
Ingredients:
4 slices salmon filets, about 2 oz.each
2 large eggs
1 tbsp.finely chopped scallion, or onion
1 tbsp.ground fresh ginger
2 tbsps.cornstarch
3 tbsps.vegetable oil for stir frying
Seasonings:
1 tbsp.rice vinegar
1 tbsp.light soy sauce
2 tsps.white sugar
Salt to taste
Directions:
1. Cut salmon filets into thin strips, mixed with 2 tbsps.cornstarch and all the seasonings in a mixing bowl, coat evenly and let marinate for 20 minutes.
2. Lightly whisk 2 eggs with pinch of salt.
3. Preheat a wok over high heat, heat 3 tbsps.vegetable oil, saute scallion and ginger for 30 seconds, or until aromatic (P1).

4. Then add salmon filets, cook until filets change color (P2).

5. Add the whisked egg and scramble until they are quite firm and is nearly cooked (P3).

6. Taste for salt, mix well and transfer to a serving plate, serve hot (P4).
