Utensils:
Pot, wok, bowl, plate.
Serves 2
Ingredients:
2 eggs, beat in a bowl, whisked lightly
1 balsam pear, seeded, sliced well (P1)
1 tbsp.chopped scallion
1-2 tsp.salt, or to taste
1-2 tsp.chili paste
2-4 tbsp.vegetable oil

Directions:

1. Bring a large pot of water to a boil, add balsam pear and blanch for 1-2 minutes, until the color turns jade green. Drain well and set aside (P2).

2. Add 2 tbsps.vegetable oil in a wok, and turn on heat to medium, saute scallion until aromatic, about 20 seconds, swirl into the egg mixture, stir fry over medium heat until egg have set, remove from the wok to a plate for later use (P3).

3. Add another 2 tbsps.vegetable oil in the wok, heat till hot, add blanched balsam pear slices, stir fry over medium heat until soft, about 1-2 minutes (P4).

4. Put cooked egg back into the wok, continue to cook, then add chili paste, correct for salt when nears done (P5).
