Dried Tofu and Celery Stir-fry Recipe

Dried Tofu and Celery Stir-fry Recipe:
Dried tofu and celery stir-fry recipe features a delicious contrast between tangy celery and tender tofu, this recipe is very light, but not lacking in great taste.
 
Prep time: 5 minutes
Cook time: 5 minutes
 
Utensils:
Pot, wok, plate.
 
Serves 2 as a side dish
 
Ingredients: (P1)
7 oz./200 g dried tofu, cut into 1-inch sections
5 oz./150 g Chinese celery, cut into 1-2 inches sections
1 red pepper, seeded, cut into thin strips
1 tbsp.chopped scallion
2 tbsps.vegetable oil for stir-frying
Salt to taste

Directions:

1. Put on a large pot of water on to boil, then blanch the celery about 2 minutes, or until turns a brighter green, then remove to cold water to stop the cooking, drain well and set aside (P2).

2. Heat a wok, add 2 tbsps.vegetable oil and swirl to coat surface, saute chopped scallion 20 seconds until aromatic, add celery back into the wok, stir fry over medium heat for 1 minute (P3).

3. Add dried tofu and red pepper strips and cook, stirring to mix everything together (P4).

4. Salt as you would as you stir frying, then serve on a plate (P5).
