Green Peas and Meat Stir-fry Recipe:
This green peas and meat stir-fry recipe is a great example of how just a couple of ingredients to creat a terrific dish. For a little spicier version, try adding some chilis along with red peppers.
Green Peas and Meat Stir-fry Recipe
Prep time: 20 minutes
Cook time: 10 minutes
Utensils:
Wok, bowl, plate.
Serves 2
Ingredients: (P1)
200 g / 7 oz. pork or beef
3 dried black mushrooms
200 g / 7 oz. green peas
2 red peppers, cut into small cubes
1 tbsp. light soy sauce
1 tsp. sesame oil
1 tsp. white sugar
1 tsp. salt, or to taste
1 tbsp. cornstarch
1 tbsp. cornstarch, mixed with 4 tbsps. water
1 tbsp. rice wine, or dry sherry
1 tbsp. chicken essence
2 tbsps. vegetable oil for stir-frying
Directions:
1. Cut the meat into 1/2-inch cubes, mariante with 1 tbsp. light soy sauce, and 1 tbsp. cornstarch for about 10 minutes (P2).
2. Bring a large pot of water to a boil, cook green peas for about 5 minutes, drain well and set into cold water, drain again, set aside for later use (P3).
3. Soften the mushrooms by soaking in warm water for 20 minutes, then cut them into small cubes (P4).
4. Heat 2 tbsps. vegetable oil in a wok, when hot, add meat cubes, stir fry until white, swirl into 1 tbsp. rice wine then (P5).
5. Put mushrooms, and green peas back into the wok, keep stirring for 2 minutes, then add red peppers (P6&7).
6. Keep cooking until done, season with salt, sugar, and chicken essence, swirl into the cornstarch and water mixture (P8).
7. Remove from heat, sprinkle with sesame oil before serving.
