Mushroom with Squash Carrot Stir-fry Recipe:
Mushroom and meat are great together, carrot and squash are great together, what happens when you put all 4 together? A delicious, fast and easy dish that you'll want to have plenty of bread ready for!
 
Prep time: 5 minutes
Cook time: 5 minutes
 
Utensils:
Wok, plate.
 
Serves 2
 
Ingredients: (P1)
1/3 squash, cut into small cubes
4 black mushrooms, cut into small cubes
1/2-1 carrot , cut into small cubes
1/3 cup ground beef or pork
1 tbsp.chopped scallion
1 tbsps.vegetable oil
2 tbsps.water

Seasonings:
1 tbsp.ground cumin
1 tbsp.ground black pepper
1 tsp.salt, or to taste
Directions:

1. Heat a wok, add 2 tbsps.vegetable oil and swirl to coat surface, when the oil is hot, saute the chopped scallion briefly until aromatic, about 20 seconds, add ground meat before the scallion begins to brown, stir fry over medium heat until the meat changes colour and is nearly cooked through (P2).

2. Sprinkle the ground cumin and black pepper over the meat as you stir fry, add mushroom and carrot cubes back into the wok in which it was cooked, keep cooking over medium heat, add 2 tbsps.water if necessary.

3. When the carrot cubes are tender, add the squash cubes into the wok, cook, stirring to mix everything together, taste and adjust seasoning as desired.

4. Remove from the wok to a plate, serve immediately (P3).
