The terrific combination of potato, broccoli, and green beans are here, this great recipe only take you 15 minutes to cook, and it is really fantastic.

Potato Broccoli and Beans Stir-fry Recipe
Prep time: 5 minutes
Cook time: 10 minutes
Utensils:
Pot, wok, colander, plate.
Serves 2
Ingredients:
2 potatoes, skinned, cut into small cubes
200g/ 7 oz.broccoli, rinse well, cut into sections
100g/ 3.5 oz.green bean, remove the strings, cut into sections
2 tbsps.curry powder
1 tsp.salt, or to taste
3-5 chilis, chopped
5 tbsps.vegetable oil for stir-frying
Directions:

1. Bring a large pot of water to a boil, place into broccoli and blanch for about 1 minute, until color turns jade green, drain well in a colander and set aside (P1).

2. Preheat a wok over medium high heat for at least 30 seconds, then add 5 tbsps.vegetable oil,swirl to coat the surface and bottom, add potato cubes when hot, pan dry over medium high heat until brown golden, drain well and set aside (P2).

3. Pour off all but 2 tbsps.vegetable oil from the wok, heat till hot, saute chilis until aromatic, do not brown. Then add green beans, and stir fry over medium heat till cooked, put broccoli and potato cubes back into the wok, continue to stir fry (P3).

4. Stir into curry powder and 2 tbsps.water, cook until the sauce thickens, correct with salt and mix well (P4).

5. Remove from the wok to a plate, serve hot (P5).
