Saute Black Fungus Onion with Meat Recipe:
Here Black fungus, onion, and pork combine to make a really heaven-made dish, which will satisfy your stomach. 
Prep time: 5 minutes
Cook time: 5 minutes
 
Utensils:
wok, spatula, serving plate.
 
Serves 2
 
Ingredients:
3 oz./100g pork, cut into thin strips
1 onion, peeled, sliced crosswise into thin slices
4-5 black fungus, soften by soaking in warm water for 20-30 minutes
2 tbsps.chopped scallion
2 slices fresh ginger, cut julienne
2 tbsps.cumin, optional
2 red hot peppers, finely chopped, optional
3 tbsps.vegetable oil
Seasonings:
1 tbsp.light soy sauce
1 tbsp.Shao-Hsing rice wine, or dry sherry
1 tbsp.rice vinegar
1 tsp.chicken essence
1-2 tsps.granulated sugar
cayenne pepper, optional
Salt to taste
Directions:
1. Place a wok on high heat, add 3 tbsps.vegetable oil and swirl to coat surface, saute chopped scallion and ginger until aromatic, about 20 seconds, then add pork, cook over medium heat just until the pork turns white, do not brown (P1).

2. Add onion slices and cook over medium heat, stirring, until the onions soften, about 5 minutes, then stir in 1 tbsp.light soy sauce, rice wine, rice vinegar and proper quantity of sugar, cook for another 1 minute (P2).

3. For the last few minutes of cooking, add black fungus, season with chicken essence and salt to taste(P3).

4. Remove from the wok to a serving plate and serve hot (P4).

Tips:
1. Try to add some cumin, which can enhance the flavor of this dish.
2. For a bit spicier version, try adding pinch of cayenne pepper along with chopped red hot peppers.
