Sour Lotus Root Recipe

Sour Lotus Root Recipe:
This classic recipe features crispy lotus root, enhanced with the sour flavor of fermented vegetable. This sour lotus root recipe is perfect when you want some easy and tasty food.
 
Prep time: 5 minutes
Cook time: 5 minutes
 
Utensils:
Wok, colander, serving plate.
Serves 2
 
Ingredients:
1/2 lotus root, about 4oz., peeled and cut into 1-inch cubes (P1)
2 tbsps.scallion, chopped fine
2 oz.fermented vegetable, chopped fine
2 tbsps.vegetable oil
1/2 cup water

Seasonings:
1 tsp.chicken essence
Salt to taste
Directions:
1. Soak the lotus root cubes for about 20 minutes before cooking. Then drain well and set aside for later use.
2. Add 2 tbsps.vegetable oil to a wok, heat on medium-high flame until hot, add fermented vegetable, stir fry for about 1 minute (P2).

3. Then add chopped scallion (P3), stir fry for 30 seconds, then the lotus root cubes and 1/2 cup water, continue to cook for another 3 minutes (P4).

4. Taste and season with salt and chicken essence, mix to combine, then transfer to a serving plate and serve hot (P5).
