String Beans with Hot Chilis Stir-fry Recipe

Made with string beans and hot chili peppers, this is a quick and easy stir-fry recipe for busy weeknights.
Wok, plate.
7 oz./200g string beans, remove the string, cut into 1-inch sections (P1)1 tbsp.peppercorns4 chilis1 tsp.salt, or to taste5 tbsps.vegetable oil

1. Place a wok over medium-high heat, add 5 tbsps.vegetable oil and heat until it is shimmering on the bottom and very hot but not yet smoking, add the string beans and deep fry for 1-2 minutes (P2).
P22. Drain them thoroughly and place on a plate for later use.
3. Pour off the excess oil from the wok, leaving about 2 tbsps.oil in the wok, heat till hot, saute peppercorns and chilis briefly until aromatic, about 1 minute, do not brown (P3).
P34. Place the cooked string bean back into the wok and stir until thoroughly combined, taste and season with salt if necessary.
5. Serve on a plate (P4).
