Three Colors Veggies Stir-fry Recipe:
What better ways to enjoy fresh green vegetables, than in this delicious three colors veggies stir-fry recipe?
 
Prep time: 5 minutes
Cook time: 10 minutes
 
Utensils:
Wok, pot, colander, bowl, plate.
 
Serves 2
 
Ingredients:
7 oz./ 200 g wintermelon
1 carrot, cut into thin strips
1 green pepper, cut into thin strips
1 tbsp.cornstarch, mixed with 2 tbsps.water
1 tsp.salt, or to taste
2 tbsps.vegetable oil for stir-frying
Directions:

1. Preheat a wok over medium-high flame, add 1 tbsp.vegetable oil, when hot, add wintermelon, carrot, and green pepper strips and cook, stir fry 1 minute and set aside (P1).

2. Put them into a pot of boiling water, blanch for 30-60 seconds, or until turns a brighter color (P2). Then drain well in a colander and set aside (P3).

3. Add 1 tbsp.vegetable oil in the wok, heat until hot, add the blanched veggies back into the wok, stir fry over medium heat for 2 minutes, taste and adjust seasoning as desired (P4)

4. Give the cornstarch and water mixture a quick stir, then swirl into the wok, stir to thicken, cook briefly to mix everything together.

5. Remove from the wok to a plate and serve hot (P5).
