Veggies and Walnut Meat Recipe

Veggies and Walnut Meat Recipe:
This simple recipe is a terrific way to enjoy fresh veggies, such as onion, sweet potato, carrot, snow peas, and green pepper, it is simple to make and works every time.
 
Prep time: 5 minutes
Cook time: 15 minutes
 
Utensils:
Wok, plate.
 
Serves 2
 
Ingredients:
3 tbsps.walnut-meat, cut into pieces
1 onion, peeled, cut into 1/2 inch cubes
1/2 cup sweet potato cubes, about 1/2-inch length
1 green pepper, diced
1/2 cup carrot cubes, about 1/2-inch length
1/3 corn
1/3 snow peas
1 tsp.salt, or to taste
1 tbsp.ground black pepper
2 tbsps.vegetable oil
Directions:

1. Heat a wok, add 2 tbsps.vegetable oil and swirl around to coat surface, when hot, saute onion cubes, add walnut meat, stir over high heat for 1 minute (P1).

Stir fry walnut meat over high heat for 1 minute

2. Add all the other ingredients back into the wok in which it was cooked, sprinkle salt and black pepper as you stir fry (P2).

3. Reduce to low heat, add 1-2 tbsps.water, cover and cook until all the vegetables are set.

4. Serve on a plate (P3).
