Artichoke:
The Artichoke is a perennial thistle which grows to 1-2 m tall, with arching, Silvery green leaves that are commonly 50–70 cm long. The flowers of artichoke develop from an edible bud with numerous triangular scales. The edible portion of the buds consists the fleshy portions of the base, which is known as the "heart"; while the florets in the center of the bud is called the "choke". Boiling and steaming is the two traditional cooking methods.![]()
How to cook an artichoke:
1. Cut off the little thorned tips on the end of each leaves with scissors.
2. Cut off about 1-inch of the tip with a knife.
3. Add water into a large pot, sprinkle with 1 tbsp.salt, then insert the steaming basket, add the artichoke, cover and bring to a boil, then reduce heat to simmer until tender, which will take about 30-40 minutes.
4. Ready to eat.
How to eat an artichoke:
You can eat artichoke both cold and hot, just pull off the petals and dip with vinegar, ketchup, mayonnaise, or your favorite sauce, also the remaining heart is edible before you remove the hard core.
Nutritional and Health Benefits:
The artichoke is rich in vitamin C, folic acid, and potassium. Dried or fresh leaves are used to increase bile production, and lowering blood cholesterol as well.
