Amaranth is a group of plants that grows all over the world, especially in tropical areas. Amaranth comes into two groups, green leaves and red or purple leaves. While some of the amaranth are grown for their seed which can be ground into flour as a grain, and others are treated as leaf vegetable, which taste similar to spinach, but a little bit bitter, can be used in salad.

Season:
You may find amaranth in Asian markets year-round, except in winter.
Purchasing tips:
Select fresh amaranth, avoid wilted leaves with brown spots.
Storage:
Store amaranth in plastic bags, then refrigerate for about 3 days.
Preparation and Usage:
Wash amaranth thoroughly under cold running water to remove any dirt o or sand, then pat dry, separate the leaves from the hard ribs, then blanch in boiling water until tender, about 1-2 minutes, serve with other vegetables or fruits as a salad.
