Bitter melon

Bitter Melon:
Bitter melon has a distinct warty surface and an oblong shape, green in color, similar to a cucumber. The flesh of bitter melon is crunchy, and the ripe one has very strong bitter taste. Bitter melon often used in Chinese food as a stir-fry recipe, as its healthy benefits.

Other names:
Bitter Gourd, Balsam Pear, Foo Gwa.
Usage:
Before using, cut in half lengthways, remove the seeds and pith with a spoon, then cut into thin round slices or cubes, and blanch in boiling water for 1-2 minutes, or until turns a jade green color, as this can help reduce its bitter taste. Bitter melon rarely mixed with other ingredients as a salad for the strong bitter taste, but the Chinese usually stir fry them with meat or other vegetables as a side dish.
Storage:
Stored in the plastic bag in the vegetable crisper section of the refrigerator, they should keep for 4 days. 
Healthy Benefits:
Bitter melon has medicinal value, and has been used to treat low blood sugar and infections.  Like other bitter-tasting foods, bitter melon stimulates digestion. More over, bitter melon can treat HIV as well.
