Carrot:
The carrot is a biennial plant in the Umbelliferae family, it is bright in color, and honey-sweet flavored vegetable which is rich in beta-carotene. In China, carrot is a common and very famous food that you can easiy find in both desserts and main dishes. Carrots come into a variety of colors, such as orange, purple, white, red, white, or yellow in color. The tender "baby carrots" or "mini-carrots" , carrots that have been peeled and cut into small cylinders, are the other version of the common carrot, which is also available in many markets.

Carrots are available year around in many supermarkets.
Purchasing tips:
When choosing fresh carrots, select the ones with smooth skin, and bright green leaf tops, indicating fresh and tender, avoid carrots with wilted spots, or sprouting tops; If you purchase "baby carrot", avoid the slim, whitish, or wilted ones.
Storage:
Discard the green tops of the carrots before you store them in plastic bag, then refrigerate for up to 10 days. Remember do not place carrots with apples, or pears in the same place as these fruits can produce ethylene gas, which causes the carrots become bitter.
Preparation:
Rinse fresh carrots thoroughly under cold running water to discard any dirt or sand, then cut off the green top, lightly peel the skin with a vegetable peeler, slice or cut according to the recipes before use. You do want to peel the "baby carrots", if anything.
Cooking tips:
Carrots can be eaten in a variety of ways, even can eat in raw after washed, or they are chopped, grated, or boiled, and you can find them in stir-fries, soups, or stews in Chinese cuisine. If you have a blender, you can make you own style carrot juice at home, which is healthy as well as refreshing, you can also blend carrots with your favorite fruits or vegetable.
Nutritional and Health Benefits:
Many of the carrot's nutrients are in the skin, which is loaded in β-carotene, which is metabolised into vitamin A in humans when bile saltsare present in the intestines. Carrots are also rich in dietary fibre, antioxidants, and minerals. If you are "blind"at night, try to add more carrots, as the poor vision which caused by lack of Vitamin A, can be restored by adding it back into the diet.
