The common cucumber is an oblong, crunchy vegetable with tiny spines around, commonly green in color and has a mild flavor.Chinese cucumbers are quite different from the common ones, they have deep flavors, which can range from mild to bitter, and a variety of lengths, colors.Chinese cucumbers are often used in salad, stir-fries, and other Chinese cuisine.

Cucumbers are available year around in any supermarkets, the peak season of which is summer.
Purchasing tips:
When choosing cucumbers, select well shaped and firm cucumbers that are deep green in color. Avoid neither with soft or wilt spots, which is indicating spoilage, nor puffy, or shriveled ones.
Storage:
Refrigerate cucumbers in the vegetable crisper of the refrigerator for up to 1 week.
Preparation and Usage:
Peel the waxed cucumber with a peeler, then scrub the tiny spines if desired. And then slice lenghtwise in half, scoop out the seed with a spoon if desired. Ready to cook.
