Lotus root:
The lotus root is the enlarged underwater stem of a water lily, usually in a sausage shape, 6-8 inches long and 3 inches in diameter with 5-7 tunnels running through it. Lotus root has crispy white flesh inside and a mild flavor similar to water chestnut. Usually, the lotus root that found in markets is imported from China.

Season:
Fresh lotus root is available in Amarican markets year-round, you can get high-quality lotus root in Asian markets as well.
Purchasing tips:
When choosing lotus root, select firm, pinkish or grayish ones with smooth skin, avoid ones with dark or soft wilted spots and no soft spots. When sliced, the tunnels should not be ringed with brown linings, indicating age.
Storage:
Keep whole in the refrigerator for about 2 weeks. After you cutted, please soak in lemon juiced cold running water in a big container in the refrigerator for about 5 days.
Preparation and Usage:
Wash thoroughly under cold running water to discard any mud or dirt, then pat dry and cut out any mould or dark patches, and cut off the ends, peel the skin, slice if desired, soak in lemon juiced water before use.
