Rice Wine:
Also known as "yellow wine", rice wine is a flavoring liquid that is made from fermented rice, it is usually noted for a mild taste and somewhat sweet in flavor, and it has a relatively low alcohol content. Rice wine used both in drinking and cooking, the Chinese often use it to remove any strong odors from seafood, such as fish. Till now, the best quality rice wine come from Shaoxing in the Zheijang province, you can find Shaoxing rice wine easily in Asian markets. If you do not have rice wine at hand, no worry, dry sherry can also work perfectly.

Yellow wine, rice vine vinegar, rice vinegar, Shaoshing or Shaoxing wine.
Substitute:
Dry sherry, white wine vinegar, malt vinegar.
Provide:
Rice wine is available in any Asian markets, you may also find wines labelled "cooking rice liquor" or "wine for cooking", these are not as good as rice wine, as these do not have the sweet taste of rice wine.
Storage:
Store rice wine in a cold, dark place at room temperature.
